Blog Hop : Favorite Recipe/Dish

This is a regular staple in our home....hope you enjoy it as well.

Mexican Casserole
Ingredients:
1 lb ground beef/chuck (hamburger meat)
1 pkg taco seasoning
1 lg bag of Tortilla Chips (I prefer to use nacho cheese Doritos)
1 can Rotel
1 can cream of mushroom soup
1 can cream of chicken soup
2 tbsps sour cream
8oz shredded cheese (I prefer to use extra sharp Cheddar cheese)

Brown the ground meat (if available, I saute onions and bell pepper with my browned hamburger meat) and add taco seasoning according to the directions on the package. Crush, smash, crumble, into bite-size pieces, the entire bag of chips. In a mixing bowl, combine the can of Rotel, can of cream of mushroom soup, can of cream of chicken soup and cream together with the 2tbsps of sour cream. In a 9x13 ungreased baking dish begin to layer the casserole.....[1)layer of chips (1/2 of the bag), 2) layer of {ALL} browned ground meat, 3) layer of {ALL} of the soup mixture, 4)layer of shredded cheese (1/2 of the 8oz), 5) the remaining 1/2 of the bag of chips]. Bake uncovered at 350 degrees until hot bubbly hot throughout (remember, all of the ingredients are pre-cooked at this point). Top with the remainder of the shredded cheese and return to oven until cheese is melted. Enjoy!!!!

Weekend Wrap-up

I have been a little slow posting about last weekend's happenings, but here it is...

Thank goodness, I (Daddy Buck had to work and the boys were at home with a babysitter) was in good company for the last LSU football home game; otherwise, the day would have been a total loss. Yes, the LSU Tigers lost to the Ole Miss Rebels; but, I was able to spend the day with our dear friends, the Gipsons, from our old hometown of Jackson, MS. Aside from the team's loss, the day was great fun.



S (on the left in the picture) is a huge follower of this blog....Thanks S & A for coming to Baton Rouge, I had a great time at the game with you!!





On Sunday we went to church followed by lunch at TJ Ribs, the boys then skipped their naps and we went to our niece, Grace's, 6th birthday party. Happy Birthday Grace!!! The boys had an excellent time. After the party, the boys and Daddy Buck headed home for a much needed nap while I ventured to Wal-Mart to tackle grocery shopping for Thanksgiving dinner. Imagine this....I wasn't the only person with that idea :) The store was a chaotic nightmare!!

here's a party pleaser/finger food/sweet treat that's so is super-simple.....only 3 ingredients!!



Oreo Cookie "Clumps"

1 package of Oreos
1 package of cream cheese
1 package white/vanilla almond bark

crush Oreos in Ziploc bag first, cream cream cheese and slowly mix with Oreos, roll mixture into balls and dip in melted almond bark, allow them to "set-up" in refrigerator and enjoy!!

Pumpkin Fluff



We have two Halloween-themed parties to attend this weekend and here's what I will be bringing to both of them.


It's called Pumpkin Fluff. I have heard great feedback about the recipe; though, if you know me well you know that I will not be eating it seeing as it contains pumpkin pie spices. I actually got the idea from my newfound internet blogging friend at The Cover Family Chaos.


Here's the recipe (keep in mind, I'm not much on measurements):


1 can pumpkin


1 box french vanilla instant pudding mix


1 container Cool Whip


pumpkin pie spice to taste


vanilla extract to taste


*I "spiked" mine with some Amaretto Liqueur (which, it my opinion, makes everything tastier)


I will be serving the sweet dip with cinnamon graham cracker sticks and Nilla wafer cookies, hence the two other containers on the serving tray.
